What is Under Paris?

This French movie was released by Netflix on June 5, 2024. The narrative follows marine researcher Sophia Assalas (Bérénice Bejo) as she tracks a giant shark named Lilith. Sophia finds herself working in an aquarium in Paris and, to her surprise, Lilith is swimming around in the Seine. Environmental activists Mika (Léa Léviant) and Ben (Nagisa Morimoto) tell Sophia about Lilith’s existence in the river. To confirm that the shark was in the freshwater river, they attempt to spot it underwater, which brings the activists in contact with the river police.

As you might expect, the police don’t believe a shark could be swimming in the Seine. So, they dive into the river to get eyes on Lilith and end up believing what Sophia and the activists told them. The police and Sophia then inform a bumbling mayor of Paris, played by Anne Marivin, who is too concerned about hosting the Paris Triathlon. From there, the movie moves into exciting and bloody territory.

Overall, the movie is a silly bloodbath—similar to the “Sharknado” movies—but it also has an environmental message for its viewers. According to Rotten Tomatoes, 63 percent of 43 critics reviews are positive. Variety said the movie had “the best launch for a non-English language film on Netflix with 41 million views in its five first days on the service” and that a sequel is in the works.

We love hearing from our guests about their experiences, not only with our apartments, but also their love for Paris. Whether the first or fifteenth trip, the excitement for the City of Light is infectious and a reminder of why Paris Perfect was founded. Recently we received a marvelous essay by a long-time guest named Bonnie. A Southerner by birth and choice, she’s at home working in her gardens when she’s not daydreaming of Paris. Read on to learn more about Bonnie’s decade-long love affair with Paris Perfect.

A Love Affair with Paris Perfect

It all started shortly after that day so many years ago–9/11. In an effort to calm our collective anxiety, I remember clearly the president saying, “Go out and live your lives; spend money; don’t live in fear.” I wanted to help in some small way, so I took him at his word. I brought a brand new car and booked a trip to Paris. You should know that I had not previously owned a brand new car, nor had I ever been to Paris, even though the city kept popping up in my daydreams.

I booked a room in a small, but charming, boutique hotel in the Latin Quarter. The room was only slightly bigger than the two twin beds shoved together in the middle of the room. One had to either walk sideways like a crab or crawl over the bed to get to the bathroom. Right then and there I thought to myself–there has to be a better option. Considering this was my first time in Paris, I did all the touristy things.

I hurtled myself thru the Metro tunnels from corner-to-corner, but didn’t really see the city. True, I emerged into the sunlight approximately in the places I hoped to be. And except for frequent, yet-to-be-explained train delays, it was quick, but there had to be another way to get around Paris.

Because I spent the better part of that first trip frantically visiting the Louvre with its unbelievably long lines, the Musee d’Orsay, la Orangerie, the Eiffel Tower with its wicked winds and hellish lines, Montmartre, Versailles, Giverney, Invalides and the tomb of Napoleon, I never realized there were buses trundling along in the sunshine. Riding the bus would have elevated me out of the Metro darkness and afforded me to see the city and learn its layout.

Because I ate breakfast in the hotel every morning, paying dearly for my morning cup of coffee and croissant, I never noticed that there were real bakeries that I could buy my breakfast. (I must say that not only did I learn to shop for breakfast, but also that it’s twice as nice to return later in the day for a post-dinner treat.)

The first trip turned out OK. I twirled around in delight on Pont des Arts and threw my cloche hat in the air à la Mary Tyler Moore. Though, I never once shopped for food or ventured away from my hectic itinerary. I was deeply and profoundly exhausted when I returned home, and in those days, back to work. Still, as soon as I was home, I could think of nothing else but going back to Paris.

It took a few years before I would return. My parents died, followed by my brother. When it was time for me to return, I found, like some magic spell, the Paris Perfect website. From the very first time I clicked on it, I was wholly and unquestionably in love. The idea of going to Paris and staying in an apartment was revolutionary in the truest sense of the word. The guest reviews were glowing; the properties were inviting; the tours seemed to offer hope that I could go and not return in a zombie-like state.

So I booked my first apartment. It was the gorgeous Sancerre, with it’s five sets of French doors that allowed light to flood the apartment. They revealed the happy street sights below, not to mention the view of la Tour Eiffel.

We saw the World War II landing sites, American Cemetery and museum at Caen. It was a day I will never forget. Just like Arlington National Cemetery, I think all Americans should have the chance to spend the day there. You will understand the price of freedom if you do.

Paris Perfect taught me that there are true neighborhoods all over the city, and that I could go to the grocery store to buy butter, chestnut yogurt and stock up on fleur de sel and Corsican tangerine comfiture to take home. No need to buy bottled water; there is perfectly clean and safe drinking water right out of the kitchen tap, in addition to sparkling, clean water glasses!

Paris Perfect taught me that part of the fun is going to the outdoor markets and shopping with the locals. One memorable trip I bought fresh mussels and herbs and cooked glorious pot of moules. I watched the Tower twinkle as I dined at my very “own” dining room in “my” apartment.

Paris Perfect taught me about the buses. They not only transport me wherever I want to go, but I also get to SEE where I’m going. Getting lost on good old bus #69 was one of the happiest things I ever did in Paris. I learned to buy a carnet (pack of ten tickets good for both bus and Metro); they make the inexpensive cost even cheaper. But don’t put them in your purse if it has a magnetic closure, as that that can render them invalid.

The best thing Paris Perfect has given me is a sense of security. They are 100% trustworthy. What you see on their website is exactly what you find when you arrive. They make booking flawlessly easy; the cleaning crew works their magic to prepare the apartment for arrivals and the apartment is spotlessly clean. Then descending into the cool interior of the museum, after a hot morning of sightseeing – or getting the teenager out of bed – makes every member of the family happy.

The hunt begins in the Middle Ages, finding the original structure of the Louvre that is preserved within the walls of the museum, the ancient fortress commissioned by King Philippe Augustus in 1190. With almost 500 parks and green spaces in Paris, your family has plenty of choices for exploring the calmer outdoors of the city. From the well-known Luxembourg and Tuileries gardens to the smaller pearls like Jardin du Palais Royal hidden in the 1st arrondissement, you can find the right space to have some outdoor fun.

Our tips: Plan to go during the week as the parks get very busy over the weekends, and strolling early in the mornings will give you even more space to stop and smell the fresh roses. Visit the zoo at Jardin des Plantes in the 5th arrondissement. It is open every day and is the perfect size to fill a morning or afternoon of family fun.

Exploring the Parisian open-air markets is a joy at any time of the year, and particularly so during the summer months. Colorful seasonal fruits like cherries, rhubarb and apricots are in abundance on every market stall, while the restaurants make the most of proposing delicious asparagus, gariguette strawberry and raspberry dishes on their summer menus. As our minds and appetites naturally turn to the wonderful selection of fresh produce available in France at the moment, we thought it would be the perfect opportunity to catch up with our resident private Chef Brian and grill him, as it were, about some of his favorite culinary experiences in Paris.

Culinary Experiences in Paris

How long have you been working in Paris?

I have called France my home since February, 2001.

What brought you here – and why did you choose to stay?

I had been working in French and Italian restaurants in Canada since 1993 and got hired by a Canadian couple to be their private chef in Paris. Initially, I imagined staying for a year or two, but cooking for them and their interesting dinner party guests both in Paris and in the village of their second home in the south was immensely satisfying. By the time they’d retired and moved back to Canada, I’d gotten married and was busy setting up a restaurant in the South of France. By this point, the French way of life, at least in gastronomic terms, had full hold on me, and there was no question of leaving!

What is your favorite thing about the city?

I was an avid road cyclist in Canada, so one of the first things I loved was being able to ride throughout the winter. I was used to biking in Chicago, Vancouver and Montreal, so the prospect of Parisian drivers didn’t put me off at all! I had been offered a chauffeur to accompany me, but for those first five years I did all my market shopping by bicycle, stuffing everything into a large backpack. Speaking as a chef, quite naturally my most favorite thing about the city is the unequaled quantity and quality of all imaginable food and wine shops, bakeries, and daily markets. Not to mention the huge choice of restaurants, which also now offer much more progressive and healthy cooking options than when I first moved here.

Where is your preferred open air market?

I would have to give the nod to the Batignolles Saturday Organic Market in the 17^th neighborhood. As a chef, I’m a sucker for any heirloom or unusual seasonal produce. That gives me much more inspiration to get cooking in the kitchen than a slab of raw meat. I do also really like shopping at the Saxe-Breteuil market over in the 7^th neighborhood, and it’s true that you never get tired of catching a glimpse of the Eiffel Tower in the background!

What inspired your cookery book Les Marchés Français?

I got the chance to start teaching market cooking classes in 2010 with Cook’n With Class over in Montmartre (read more about our partnerships for culinary experiences in Paris here). When Pauline Boldt, my co-author and friend who did the photography for the book, convinced me to join forces with her, the most natural approach for me was the same as what I’d been creating during years of market cooking classes: pick up whatever looked most special that day and look for inspiration based on the season, the weather and my mood. I wanted the book to represent all types of diet in French cooking, and all the produce possible throughout the four seasons.

How do your market tours and cooking classes work?

Rather than propose prefabricated formulas, I prefer to just meet my clients at whatever point of interest they have. Without suggesting a set menu in advance, which kills spontaneity in the market, we first just start out by having an initial look around the different displays. The starting point for a meal is always what’s at the peak of its season. When I have learned which ingredients are of most interest, I suggest possible dishes which are simple enough to prepare in a short amount of time, but special enough to impress dinner party guests. We bring back our goodies to the kitchen and spend the next two hours cooking everything up together. It’s not even hard work, and the time flies by. Next thing we know, the cork has been popped and everyone is enjoying a memorable meal.

Tell us a little about your love for seasonal ingredients.

I’m always baffled when I see a restaurant proposing asparagus in the autumn or strawberries in the winter. The most obvious starting point for good cooking is seasonality, not only for the good of the planet, and local ties with farmers, but for flavor and nutrition. Not all the markets are inspiring, mind you. You have to be on the lookout: a few of the stands are manned by hawkers who have just bought a standardized selection of produce from the same mass wholesale distribution. When I first got to Paris, I was a little depressed to see how much of the produce was from Spain and Morocco, not to mention Kenya and Peru! Things have changed since; many people assume that everyone in France is a locavore by nature, but what may have been true before the end of WWII and the arrival of mass agriculture and supermarkets is making a slow and steady comeback in France. Traditional farmers are suffering and farms are being sold, but niche and organic producers are taking up the torch.

Which is the dish you love to cook the most?

I really don’t have a favorite dish, but I do most appreciate the ingredients that are only available for a short period of the year: figs, asparagus, raspberries, cherries, watercress, red tuna – to name just a few of the dozens!

Can guests also enjoy culinary experiences in Paris ‘behind closed doors’ in a Paris Perfect apartment with you?

I work very frequently with Paris Perfect to propose private chef dinners for guests staying in one of the apartments. Working to a pre-arranged theme, I am always happy to incorporate cooking classes for clients who may not have time or interest in market shopping. In that case, I arrive at the apartment with everything we need to prepare a three-course dinner, including the wine. The courses are always very relaxed and adapted to every skill and experience level. Some people prefer just to chill out and relax with a glass of champagne, while others are keen to get to work with me in the kitchen! I want my clients to have much more than a good time and to really feel they have come away with some new techniques and useful cooking knowledge, as well as enjoying a great meal.

Paris is synonymous with being a city of pleasure, and lovers of the Musée d’Orsay will be familiar with Impressionist works by masters such as Degas, Manet and Toulouse-Lautrec, which depict the life and times of colorful female characters from the 19^th century. This month, the Travel Design Team is taking you behind closed doors, on a unique Paris tour. We take a walk on the wild side of the capital, traveling back in time to meet some of the most scandalous characters who’ve given Paris its racy reputation.

We’ve seen infamous French courtesans gracing the silver screen for decades. From Leslie Caron playing Colette’s irrepressible Gigi to Nicole Kidman enthralling us with her trapeze-swinging portrayal of Satine in Moulin Rouge. We’ve all sobbed at the hapless plight of poor Fantine in Les Misérables, and readers of Émile Zola’s Rougon-Macquart series of novels have grimaced at the tragic ending of high-class prostitute Nana and her antics at the Théâtre des Variétés. More than any other city in the world, Paris is renowned for its rich history in and out of the bedroom. Join us on this fascinating, eye-opening unique Paris tour and find out exactly where all the action took place.

Our walk begins close to the Louvre, at the appropriately named Place Colette. Here is where we learn about the author’s unconventional life story, as well as some salacious tales of Napoleon Bonaparte being deflowered in the nearby Palais-Royal, as an unattractive 18-year-old. Around the corner is the first shop to sell prophylactics in 1760. Just a few minutes in and we’re definitely off to a flying start on this unique Paris tour.

As we continue along the offbeat route through the 2^nd arrondissement, we learn about the trials and tribulations facing women during the Belle Époque, at the turn of the 20^th century. In a time of peace and prosperity, there was much joie de vivre, and great developments were made in science and technology. In reality, however, much of France still had a large economic underclass, and poverty remained endemic in Paris’ urban slums; so while the nouveau–riche were freely enjoying all the new forms of light entertainment, their less affluent compatriots spent their leisure time and hard-earned wages in the insalubrious cabarets and music halls that opened across the city.

As a result, the capital became a literal hotbed of temptation and vice. Some of the cosseted high-class courtesans (fittingly known as les grandes horizontales) accumulated massive fortunes during their ill-spent years. But at the opposite end of the spectrum were the demi-mondaines, lorettes and grisettes, who took to the streets from pure necessity rather than as crafty career moves. At the peak of the Belle Époque, more than 200 maisons closes (brothels) had been established, with 150,000 registered filles de joie offering their wares to an impassioned and tantalized audience.

The term ‘City of Light’ also took on a new, shadier connotation during this unique Paris tour. France had recently been illuminated by the invention of gas lamps, so ladies of the night took full advantage by deliberately standing near flattering light as darkness fell. As the twilight hour began, throngs of gaudily dressed women appeared on the boulevards to flash a coquettish ankle during what was known as the ‘absinthe hour’. Degas’ famous work is a remarkable testimony to the harsh times, for some of the women, who pursued this profession; in this case, a picture indeed paints a thousand words.

By sharp contrast, as we cross into the less touristy 9^th neighborhood, we stop in front of Les Folies Bergères to hear about the wealthy Spanish beauty named La Belle Otero, an actress-dancer-turned-courtesan. Her voluptuous bosom was said to have inspired the twin cupolas of the Hotel Carlton in Cannes. She was said to be responsible for the deaths of no less than six suitors who committed suicide when they fell out of favor with her.

La Belle Otero was also associated with a very conspicuous player on the Parisian scene from across the Channel. While his mother, Queen Victoria, was still on the throne in England, heir apparent Edward VII spent many a happy night ensconced in his favorite bordello, which is now an inconspicuous-looking office on rue Chabanais. Ana pointed out where two elevators were previously located. Their purpose was to keep those arriving from encountering those leaving. The Prince of Wales did not have to worry about this fine detail, however, as he had his very own room at Le Chabanais, complete with coat of arms above the bed.

The future king apparently liked to bathe in a champagne-filled giant copper bath, adorned with a half-woman-half-swan figurehead. The tub was subsequently purchased by Salvador Dalì when the brothel closed its doors in the 1940s. ‘Dirty Bertie’, as Edward VII was fondly nicknamed, was also the proud owner of a famously accommodating love seat, or siège d’amour. Modesty keeps us from going into further detail, but for anyone whose curiosity has been piqued, you can learn about the chair’s qualities on this unique Paris tour.

Ana showed us how to recognize the tell-tale signs of brothels behind the innocent-looking doorways of today. We continued our scandalously unique Paris tour to the famous Hôtel Amour and past the even more titillating Chez Christiane on rue Navarin, before finally reaching the glorious Place Saint Georges. Here stands the impressive Hôtel de Bernis, lavishly constructed by the Marquise de Païva’s husband. La Païva then built an even more opulent abode on the Champs-Élysées, where it still stands today, next to the equally flamboyant Abercrombie & Fitch flagship store. Ironically, it’s now a gentleman’s club!

Where else to end our unique Paris tour, but in the former red-light district of Pigalle? Just a stone’s throw away from the Moulin Rouge is what was once one of the neighborhood’s thriving brothels. It is now a luxury boutique hotel, which just happens to serve some of the best cocktails in the city. It was a decadent treat to sink into the velvety sofas at Maison Souquet with a delicious, complimentary drink. We listened to a few more risqué tales of the past.

If you’re looking for a unique Paris tour and have already done the main museums and sightseeing tours, this brilliantly seductive walk will take you to places visitors rarely frequent. It can’t be more highly recommended!
